Wedding season is here, that means I have to tell myself 'Mayuri you have nice outfits you need to fit into, so be healthy'. You would think that being vegetarian and all that would be healthy....but no quiet the contrary! I love, love, love , LOVE carbs. So eating healthy and still getting my carb fix is quiet a challenge. Since I'm home on break for the summer, mom usually makes lunch in the morning before heading to work... but today I wasn't feeling the usual daal/bhaat combo (whose surprised, I wasn't up for Indian food?) SOOOOOO my bro and made these amazing wheat tortilla quesadillas loaded with veggie goodness, beans and low fat cheese. YUM.
My bro was actually a fan (which says a lot because...he is not fond of my cooking what-so-ever) ha.
I guess the take home point is that little substitutions count, wheat instead of white, extra veggies, and cheese made from skim milk. :)
